Pea, Mint & Avocado Pesto
A fresh and healthy pesto with zingy lime and creamy avocado

You will need:
· 120 g Peas, thawed
· 4 heaped tablespoon Mint (chopped)
· 1 Garlic clove, crushed
· 2 tbsps Lime juice
· 2 tsps Lime zest
· 4 tbsps Olive oil
· 2 tbsps Pine nuts, toasted
· 35 g Parmesan, grated
· Salt and Pepper
Method:
♥ Place all the ingredients in a food processor and pulse until smooth
♥ Season to taste
♥ Serve stirred into cooked pasta with extra peas, mint and lime if desired.
♥ Garnish with pea shoots
