Elderflower Jellies

a refreshing elegant dessert

I made these beautiful light jellies from homemade Elderflower Cordial. You can of course use shop bought. I chose to set them in Prosecco flutes for a more sophisticated dessert.


You will need:

250ml elderflower cordial

450ml cold water

6 gelatine leaves

1 tsp lemon juice


Method:

♥ Mix the cordial and water together

♥ Soak the gelatine leaves in cold water for 5 minutes to soften

♥ Heat 100 ml of the the cordial mixture until hot but not boiling then remove from heat

♥ Squeeze out excess water from the gelatine and then stir into the cordial to dissolve

♥ Stir in the remaining cordial and lemon juice.

♥ Pour into chosen glasses and chill overnight.


I served mine topped with piped cream flavoured with elderflower.
